pigeon ravioli (hard work but i think you'll find they're worth it)

    275g plain flour (00)
    2 eggs/3 yolks: whisk together.
    pinch salt
    tsp olive oil

combine all and mix into a solid dough, add egg mix in stages somtimes needs all the egg somtimes not.

    this makes your pasta.
if you don't have a pasta machine to roll your pasta out a flat surface and flour can be done (you want it about 2mm/3mm)

4 pigeon breasts diced into 5mm cubes: seal pigeon lightly in a hot pan
4 onions finely sliced and caramelised: do this by throwing all the sliced onion into a hot pan with a knob of butter and stir alot leve to scorch and stir some more, they'll go a dark brown colour
    200g mash
    50g grated parmesan
    some chopped parsley
    salt
    pepper

combine all in a bowl and basically mush together

roll out pasta into a sheet 10/12cm wide and as long as it will go
lightly brush with a beaten egg
on one half put balls of your mix, bit bigger than a paint ball, imagine a 2/3 cm space round each ball.

fold other half of pasta over the top of the balls and press the pasta down and around all the balls, cut out (they'll look like flying saucers).

drop into a boiling pan of water for 6 mins

eat on own or with a cheesy sauce or light tom sauce(a bought dolmio type thing)

if anyone can be arsed even trying this give me a shout and tell me what you think.
