iv seen on and in various places one can buy sausage skins, yes yes i know you can use the intestine linings but the wife and kids have just outright refused to eat that.
so,
i have been looking around the bootfairs for one of those old type meat grinders, you know the sort, the ones that clamp on the table with a handle on the side.
i just thought how nice it would be to make up some say, rabbit,pidgeon,squirrel and a wee bit of pork sausages!
and you would know whats in them e.g. no nasty bouncy bits.
oh and instead of on of one of those old grinders, is there any other way of grinding the meat up? i.e a suitable food processor?
what do you guys reckon?

food processor will work just as fine but u will need one of them sausage piping machines they use to put them in the skins

the meat grinder is definatly the way to go. you can buy an attachment for them that pipes the meat into the sausage casing. and i would definatly put either a piece of belly pork or a few butcher bought sausages in the mix aswell, as im sure you know rabbit is a very lean meat with next to no fat so the pork will help add a little. a food processor will be ok just dont go nuts or you will end up with pate instead of mince. if the sausages are to fiddley try burgers instead.
Also another way but longer is use a piping bag to pipe it into the skins
