    Salting a rabbit, is it necessary?

    Hi,
    Some recipes say you always need to soak a rabbit in salted water overnight before cooking it to remove bitterness, some don't mention it at all.

    I want to cook some rabbits and wondered if anyone knows if it is definitely necessary to salt it?

    I don't usually, I kind of don't like the idea of leaving raw meat festering in water.

    Yea, I give them a really good wash, then drip dry them with paper towel to stop freezer burn.

    I know what you mean it does sound a bit strange, but then again so does hanging game for days on end, which brings me to another question, do you hang the rabbit to make it taste better or not?

    No, I don't do that either. Depending on what time I finish shooting I may leave the skinning till the next morning, but be sure that you've emptied its bladder and gutted the beastie.

    my favourite method is to put it in a slow cooker with a jar of curry

    I soak mine in a large pan of cold water with plenty of salt over Night in the fridge. it certainly doesn't fester. it takes away that 'farm' taste you sometimes get with rabbit. I then boil them for two and a half hours till the meat falls off the bone and then I serve it with whatever I fancy at the time

    Danny,
    Check our Mark Gilchrist on 'You Tube' does superb vids on all sorts of meat prep. and cooking.
    He too salts his rabbit overnight and the next ones I get I am going to try this on too. The salt in the water (about a fist full) will stop the meat festering !
