BBQ Rabbit
3 rabbits, quartered
~ 1 large onion, chopped
~ 1 large can tomatoes
~ 1/2 - 3/4 cup sugar
~ 1 tbsp butter
~ 1/2 cup vinegar
~ 1/2 cup ketchup
~ 1 tbsp favorite bbq sauce
~ 1 tsp cinnamon
~ salt
~ pepper
~ dash chili powder
Place rabbits in a large pot. Cover with water and bring to a boil. Reduce heat and cook 1 - 1 1/2 hours or until tender.
Remove meat from pot and allow to cool. Debone.
Place meat in a crockpot and add the rest of the ingredients adding the sugar, salt and pepper to taste.
Cook on low all day.
Serve on buns or on the side.

Rabbit pot pie
~ water
~ vinegar
~ salt and pepper
~ flour
~ 2 medium onions, chopped
~ 2 carrots, diced
~ 3 potatoes, diced
~ pie crust or biscuits
1 rabbit, cut into serving pieces
Soak rabbit in equal parts of water and vinegar overnight.
Remove rabbit from water/vinegar mixture and dry. Season with salt and pepper to taste and roll in flour.
In a stew pot, large skillet or dutch oven, heat a little oil and brown the rabbit quickly on both sides.
Add enough water to cover the rabbit. Cover and simmer for 1 to 1 1/2 hours.
Add the onions, carrots and potatoes. Cover and simmer until carrots are tender.
Thicken the broth with flour. Use 2 tablespoons of flour for each cup of broth.
Pour into a greased baking dish and top with the pie crust or with biscuits.
Cook at 375 degrees until the crust is golden brown.

Shredded Rabbit
1-6 Rabbits
~ butter
~ salt
~ pepper
Place the rabbits in a large pot. Cover with water.
Cover, bring to a boil. Reduce heat to medium.
Cook 3 – 4 hours or until the rabbits are cooked through.
Remove and allow to cool.
When cool, pull meat from the bones and shred. Remove any shot you may find.
You can freeze the meat for later use or proceed.
Add some butter and a little water to a large skillet. Add a few pinches of salt and pepper.
Add the meat and fry until slightly brown.
Serve with your favorite side dishes.
