Managed to bag a massive hare today but in need of a recipe, is there much difference between hare and rabbit meat?
Roast it mate, but take its coat off before you put it in the oven.![]()
I've got a couple of jointed de-boned Leverets marinading (sp) in the fridge overnight ready for tmoro.
White wine to cover, with sliced onion, 6 garlic cloves, 1 tsp peppercorns, 1 tsp cloves, 5 bay leaves.
Then tmoro I'll cut em into cubes, re-use the herbs with a glass of white wine and tomato puree, 20 shallots and sea salt. Fry them off and cover with wine for an hour, add the onions and herbs again and simmer until tender.
1st time cooking hare this way so I'll let you know how it goes
To be served up with boiled tates, leeks (with cheese), carrots, chard and turnips fresh off the allotment![]()
