    Trying a Roast Rabbit

Welcome back to "Cooking with Lee" lol

well I am trying a simple roast with some Garlic, lemon Thyme, onions and carrots
bit of salt and pepper and 4 bay leafs and olive oil,

all bunged in the oven @ 180c for about an hour

you can then cook all your trimmings as you go, ie potatoes, yorkshires etc

Not enough fat to roast, I would suggest covering in streaky bacon..

With game in general when roasting.you should aim to add some fat into the meat to stop it drying out as most game is very lean, streaky bacon is good as it also adds to the flavour
