A good one's a rabbit cooked whole in this way -
Rub olive oil and a little salt into the flesh. Smash as much garlic as you're happy with and stuff the rabbit with it, using any spare on the outside. Sprinkle with herbs (my favourite for this is a mix of rosemary and thyme) and wrap the lot in foil.
Cook over a fire pit at about 18". Make sure that the fire's very hot and that there are no flames, just red hot coals. Leave the rabbit wrapped up for as long as you can - 4-5 hours is good. Serve with veg kebabs.
